So don’t rinse off those noodles after cooking–they’ll soak up all the delicious sauce flavors while they’re sitting right there at the pot-side and will taste just as good without excess liquid clingin’ onto them too. A cast-iron skillet does wonder when sautéing garlic or onions because its heavyweight helps combat scorching (and burnt onion smells). You also get some bonus points with this little trick: sliced garlic has smaller pieces so it doesn’t burn quite as easily.
